Eton Mess with Frozen Black Grapes and Grape Coulis

Use store-bought meringue nests to create this speedy Eton mess.

Ingredients

  • 4 meringue nests
  • 1 cup (170g) Sun World black seedless grapes, frozen
  • ½ cup (85g) black grapes
  • ½ cup (100g) sugar
  • 1 tbsp (15ml) water
  • ½ cup (125ml) thickened cream, lightly whipped to soft peaks
  • ¼ bunch mint, leaves picked

Directions

  1. In a small saucepan, add ½ cup of the Sun World black seedless grapes, the sugar and the water and bring to a simmer. Cook for 10-15 minutes or until the grapes are softened and the liquid has slightly thickened.
  2. Break up the meringue nests into large chunks and place into a glass or small bowl, add a dollop of cream and decorate with the frozen grapes before drizzling over the coulis and finishing with some picked mint leaves.
